Mama Jean's Ope wrap / no-Bake Pizza
My lovely Mom comes up with the most amazing healthy meals and today I want to share one with you that she had for her supper last night. Yup, she took the photo too!
As you know by now, I love my veggies and my salads and avo's...well let's not even go there. Save to say I'm hooked! You can make this one either vegan or Keto/Banting simply by substituting the base (Low Carb Life's Pizza base for keto and any good gluten free base for vegan if you want the thin base) and the mayo, which is why I showed the two mayos int he image.
So what does my Mom have on here? Shredded mixed lettuce leaves, chopped tomato, red and yellow bell peppers, cucumber, grated carrot, olives, avo and Martinnaise Original topping in place of cheese. If not vegan, crumbled feta cheese and Olive & Herb Banting/Keto Mayo over the top.
I love my Mom's food!
